Ingredients
  

  • 1 cup roasted red peppers drained and patted dry
  • 5 oz cream cheese softened
  • 3/8 cup sour cream
  • 1 tbsp soy sauce
  • 1/4 tsp sesame oil see notes
  • 1 garlic clove minced
  • 1/2 tsp grated ginger
  • 1 tbsp rice vinegar
  • 1 tsp gochujang Korean chili paste, optional for a spicy kick
  • 2 tbsp scallions finely sliced
  • 1 tsp sesame seeds Optional for garnish
  • Salt and pepper to taste to taste

Instructions
 

  • Combine the roasted red peppers, cream cheese, sour cream, soy sauce, sesame oil, garlic, ginger, rice vinegar, and gochujang (if using) in a blender or food processor. Blend until silky smooth.
    1 cup roasted red peppers, 5 oz cream cheese, 3/8 cup sour cream, 1 tbsp soy sauce, 1 garlic clove, 1/2 tsp grated ginger, 1 tbsp rice vinegar, 1 tsp gochujang, 1/4 tsp sesame oil
  • Taste the dip and adjust the saltiness or spice to your liking with a touch more soy sauce or gochujang.
    Salt and pepper to taste
  • Stir in the sliced scallions for a pop of freshness. Transfer to a serving bowl and sprinkle with sesame seeds for that nutty crunch.
    1 tsp sesame seeds, 2 tbsp scallions

Notes

Pair with crispy wonton chips, cucumber slices, or even nori (seaweed) crackers. It’s the perfect balance of creamy, tangy, and savory!
For best results, make ahead and let sit overnight so flavors meld.
Adjust the sesame oil as desired. I start with a 1/4 tsp., increasing until I get the desired nutty and smoky flavor.
